Ladies Finger is my favorite vegetable.
Perhaps, anything to do with ladies, automatically becomes my favorite.
And then a Lady`s Finger without a Ring is always Yummy.
The key for a Yum Lady Finger is that as in real life the young variety are the best.
Choose carefully the green , small , thin, curvy and flexi.
I was not so lucky to get the right variety of Lady Fingers, but whatever !
All the Recipe needs is
Lady Fingers : 250 gms
Onion : 1 Red Large thin long slices.
Green Chillies : Slit Wide open , hot and punchy, around 10 No.
Olive Oil : 3T
Turmeric Powder : 1T
Red Pepper : 1T
Salt To Taste.
Get a Dry spice made out of
Garam Masala : 1 T
Red Pepper : 1 T
Cummin Powder : 1T
Mix the Three and homogenize it.
Cut the Lady Fingers across the middle and fill it up with little of the Dry Spices.
Do not confuse with the Tomats, these are not part of this recipe.
This is how it should Look.
Now the key thing is about getting the Onions and Chilies Right.
These are the two, which finally will get the Buzz into the final Dish.
On to the skillet , pour olive oil 1T and swing in the onions and Caramelize it and keep it aside.
Use the Balance oil to now fry the Lady Fingers and the chilies.
Add Salt , Turmeric and Red Pepper .
Allow it to cook for say 7 to 9 mins on medium flame and as the Fingers change colour,
Top it up with the caramelized onions.
Now there are chefs who actually fry the onions along with the Fingers , but somehow the real taste only shows up with separately caramelized onions.
The Onions make it sweeter and chilies make it spicier and Fingers Bring the" Yum".
